Mike’s Red Tacos

Henry’s Take

That quote is “trending” (literally nowhere), but perhaps it should be.  While you may feel inclined to debate me on this subject, you likely wouldn’t debate me on whether “Mike’s Red Tacos” is serious about its birria. After all, they marinate it for a full 8 hours before serving it to you!

What’s the deal with the “Red” in the name you say?  One of their staff members was kind enough to explain that they added that part because of how the red chili oil rises to the surface during the marinating process.

One thing is for sure, while they may provide an ample selection of salsas, I found their birria so flavorful that I never even considered sampling any of them.

Given that Mike has found a way to infuse his beef birria into the tacos, quesadillas, crunchstacks, burritos, nachos, fries, (and even the ramen), I have to wonder if he’ll also find a way to include it in the churros.  If anyone can, I’d bet it would be Mike.

Birria not quite your jam?  Not to fret because Mike’s also offers a veggie taco.

Mike can call his tacos red or any other color he wants because what matters most is that they are worth driving down from North County San Diego for.  🙌
